Ingredients:

  • 2 cups cooked chicken, shredded

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • ½ cup cream cheese (room temp)

  • ¼ cup mayonnaise or sour cream

  • 1 teaspoon Dijon mustard (optional)

  • Salt and black pepper to taste

  • ½ teaspoon paprika

  • ½ teaspoon dried thyme or oregano

  • 1 tablespoon chopped fresh parsley

  • 1 cup shredded mozzarella or cheddar cheese

  • 1 sheet puff pastry (thawed)

  • 1 egg (for egg wash)

  • Instructions:

    1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.

    2. In a skillet, heat olive oil over medium heat. Add onion and cook until soft. Stir in garlic and cook for 1 minute.

    3. Add shredded chicken, cream cheese, mayo, mustard, herbs, and spices. Mix until well combined and creamy. Stir in cheese and parsley. Remove from heat and let cool slightly.

    4. Roll out puff pastry and cut into rectangles (about 4×6 inches each).

    5. Place 2–3 tablespoons of filling on one end of each rectangle. Roll up tightly and seal the edges by pressing lightly.

    6. Place rolls seam-side down on the baking sheet. Brush with beaten egg.

    7. Bake for 20–25 minutes or until golden brown and puffy.

    8. Let cool for a few minutes before serving.

      Tips:

      • You can prep and freeze the rolls before baking.

      • Serve with garlic sauce, ranch, or a sweet chili dip!
