Cheesy Potato Balls Recipe

Crispy on the outside, melty and gooey on the inside—these cheesy potato balls are the ultimate comfort snack! Perfect as a party appetizer, game day treat, or even a cheesy side dish, they combine creamy mashed potatoes with savory herbs and a gooey cheese center, all coated in a golden, crunchy crust. Ingredients:

  • 3 cups mashed potatoes (cooled)

  • 1 cup shredded mozzarella or cheddar cheese (or small cubes)

  • 1/2 cup grated Parmesan cheese

  • 2 green onions, finely chopped (optional)

  • Salt and pepper, to taste

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1/2 cup all-purpose flour

  • 2 eggs, beaten

  • 1 cup breadcrumbs (Panko or regular)

  • Oil for frying

  • Instructions:

    1. Prepare the mixture:
      In a large bowl, mix the mashed potatoes, Parmesan, green onions (if using), garlic powder, paprika, salt, and pepper until well combined.

    2. Shape the balls:
      Scoop about 2 tablespoons of the potato mixture and flatten slightly in your palm. Place a cube or pinch of cheese in the center and roll into a ball, sealing the cheese inside. Repeat with the rest.

    3. Coat the balls:
      Roll each ball in flour, dip in beaten egg, and coat in breadcrumbs. For extra crunch, double dip in egg and breadcrumbs.

    4. Chill (optional but helpful):
      Place balls in the fridge for 20-30 minutes to firm up before frying.

    5. Fry until golden:
      Heat oil in a deep skillet or pan to 350°F (175°C). Fry the balls in batches until golden brown, about 2–3 minutes. Drain on paper towels.

    6. Serve hot:
