Ingredients:

3 cups mashed potatoes (cooled)

1 cup shredded mozzarella or cheddar cheese (or small cubes)

1/2 cup grated Parmesan cheese

2 green onions, finely chopped (optional)

Salt and pepper, to taste

1 tsp garlic powder

1 tsp paprika

1/2 cup all-purpose flour

2 eggs, beaten

1 cup breadcrumbs (Panko or regular)

Instructions:

Prepare the mixture:
In a large bowl, mix the mashed potatoes, Parmesan, green onions (if using), garlic powder, paprika, salt, and pepper until well combined. -
Shape the balls:
Scoop about 2 tablespoons of the potato mixture and flatten slightly in your palm. Place a cube or pinch of cheese in the center and roll into a ball, sealing the cheese inside. Repeat with the rest. -
Coat the balls:
Roll each ball in flour, dip in beaten egg, and coat in breadcrumbs. For extra crunch, double dip in egg and breadcrumbs. -
Chill (optional but helpful):
Place balls in the fridge for 20-30 minutes to firm up before frying. -
Fry until golden:
Heat oil in a deep skillet or pan to 350°F (175°C). Fry the balls in batches until golden brown, about 2–3 minutes. Drain on paper towels. -
Serve hot:
