these Cheesy Mashed Potato Muffins are about to become your new favorite treat! They’re crispy on the outside, soft and cheesy on the inside, and packed with flavor.

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made)
  • 2 large eggs
  • ½ cup shredded cheddar cheese (or your favorite cheese)
  • ¼ cup grated Parmesan cheese
  • ¼ cup milk
  • 2 tablespoons butter, melted
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon onion powder (optional)
  • ¼ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ cup chopped green onions or chives (optional)
  • ½ cup breadcrumbs (for added texture, optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease or line a muffin tin with cupcake liners.
  2. In a large bowl, mix the mashed potatoes, eggs, cheddar cheese, Parmesan, milk, melted butter, garlic powder, onion powder, salt, and pepper until well combined.
  3. Fold in the green onions or chives if using.
  4. Spoon the mixture into the prepared muffin tin, filling each cup about ¾ full. If desired, sprinkle breadcrumbs or extra cheese on top for a crispy topping.
  5. Bake for 20-25 minutes or until the tops are golden brown and slightly crispy.
  6. Allow the muffins to cool for a few minutes before carefully removing them from the tin.
  7. Serve warm with sour cream or your favorite dipping sauce.

    • Swap cheddar for mozzarella or pepper jack for a different flavor.
    • Add crumbled bacon or diced ham for a heartier version.
