1 lb ground beef

1 small onion, diced

3 cloves garlic, minced

5–6 medium russet potatoes, peeled and thinly sliced

1 can (10.5 oz) cream of mushroom soup

1/2 cup sour cream

1/2 cup milk

2 cups shredded cheddar cheese (divided)

Salt and pepper to taste

1/2 tsp paprika

1/2 tsp dried parsley (optional)

Cooking spray or butter (for greasing)

Instructions:

Preheat Oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Cook Ground Beef:
In a large skillet over medium heat, cook ground beef with diced onion until beef is browned. Drain any excess fat. Add garlic, salt, pepper, and paprika. Cook another 1–2 minutes. -
Make Sauce:
In a mixing bowl, combine cream of mushroom soup, sour cream, and milk. Stir in 1 cup of the shredded cheese. -
Layer Casserole:
Place half the sliced potatoes in the bottom of the greased dish. Spread half the beef mixture over the potatoes. Pour half the sauce on top. Repeat layers with remaining potatoes, beef, and sauce. -
Top with Cheese:
Sprinkle the remaining 1 cup of cheddar over the top. -
Bake Covered:
Cover with foil and bake for 60 minutes. -
Bake Uncovered:
Remove foil and bake another 20–25 minutes, until potatoes are tender and cheese is golden and bubbly. -
