Cheesy Broccoli and Cauliflower Gratin

Ingredients:

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups whole milk
  • 1 teaspoon Dijon mustard
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup Parmesan cheese, grated
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • ¼ cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.
  2. Cook the vegetables: In a large pot, bring salted water to a boil. Add the broccoli and cauliflower florets and cook for 3-4 minutes, until just tender. Drain and set aside.
