Ingredients:

Crust:

  • 1 cup graham cracker crumbs (use GF if needed)

  • 2 tbsp granulated sugar

  • 4 tbsp melted butter

Filling:

  • 16 oz (450g) cream cheese, softened

  • 1/2 cup granulated sugar

  • 1 tsp vanilla extract

  • 2 large eggs

  • 1 tbsp sour cream (optional for creaminess)

Topping ideas (optional):

  • Fresh berries

  • Chocolate ganache

  • Caramel drizzle

  • Crushed cookies or nuts

Instructions:

  1. Preheat oven to 325°F (165°C). Line a mini muffin pan with paper liners or lightly grease.

  2. Make the crust:
    In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press about 1 tsp into each mini muffin cavity. Bake for 5 minutes, then remove and cool slightly.

  3. Make the filling:
    Beat cream cheese until smooth. Add sugar and vanilla; mix until fluffy. Beat in eggs one at a time. Add sour cream (if using) and mix just until blended.

  4. Fill and bake:
