This hearty casserole is perfect for a comforting weeknight dinner. The creamy cheese sauce pairs beautifully with tender potatoes and smoky sausage, creating a dish that’s both flavorful and satisfying. It’s easy to make, filling, and a crowd-pleaser, whether you’re feeding a family or serving it at a potluck.
Ingredients:
- 1 lb smoked sausage, sliced
- 6 medium russet potatoes, peeled and thinly sliced
- 2 cups shredded cheddar cheese
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook the smoked sausage: In a large skillet over medium heat, cook the sliced smoked sausage until browned. Set aside.
- Make the cheese sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to make a roux. Slowly whisk in the milk and continue cooking until the sauce thickens. Stir in the garlic powder, onion powder, salt, and pepper. Remove from heat and stir in 1 1/2 cups of the cheddar cheese until melted.
- Assemble the casserole: Layer half of the sliced potatoes in the prepared baking dish. Top with half of the cooked smoked sausage and half of the cheese sauce. Repeat with the remaining potatoes, sausage, and cheese sauce.
- Bake: Cover the dish with foil and bake for 60 minutes. Remove the foil, sprinkle the remaining 1/2 cup cheddar cheese on top, and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.
- Garnish and serve: Let the casserole sit for a few minutes before serving. Garnish with fresh parsley if desired.
Enjoy your delicious, cheesy, and smoky casserole!
