this Chaffle Bacon Cheeseburger is the perfect option! Instead of a traditional bun, we’re using crispy, cheesy chaffles—waffles made with eggs and cheese—to hold all the juicy, savory goodness together.

Ingredients

For the Chaffles (Makes 2 Buns)

  • 1 large egg
  • ½ cup shredded mozzarella or cheddar cheese
  • 1 tbsp almond flour (optional, for a firmer texture)
  • ½ tsp baking powder (optional, for fluffier chaffles)
  • ½ tsp garlic powder (optional, for extra flavor)

For the Burger

  • 1/3 lb ground beef (80/20 for juicier patties)
  • 1 slice cheddar cheese
  • 2 slices cooked bacon
  • 1 tbsp mayonnaise
  • 1 tsp mustard
  • 1 tsp sugar-free ketchup
  • 2 slices pickles (optional)
  • 1 leaf lettuce (optional)
  • 1 slice tomato (optional)
  • Salt and pepper, to taste
  • Instructions

    Step 1: Make the Chaffles

    1. Preheat your waffle maker.
    2. In a small bowl, whisk the egg, then mix in shredded cheese, almond flour, baking powder, and garlic powder (if using).
    3. Spray the waffle maker with nonstick spray and pour half of the mixture into the center. Close the lid and cook for about 3–4 minutes, until golden and crisp.
    4. Repeat with the remaining batter to make the second chaffle. Set aside.

    Step 2: Cook the Burger

    1. Heat a skillet over medium-high heat. Shape the ground beef into a patty, season with salt and pepper, and cook for about 3–4 minutes per side, or until it reaches your desired doneness.
    2. In the last minute of cooking, place a slice of cheddar cheese on top and let it melt.

    Step 3: Assemble the Chaffle Bacon Cheeseburger

    1. Spread mayonnaise, mustard, and ketchup on one chaffle.
    2. Layer the cheeseburger patty, bacon slices, pickles, tomato, and lettuce.
    3. Top with the second chaffle and press down gently.
