Ingredients (makes 2 small flatbreads)

  • 1 cup (about 225g) full-fat cottage cheese

  • 2 large eggs

  • Pinch of salt (optional)

Instructions

  1. Blend – Add cottage cheese and eggs to a blender or food processor. Blend until completely smooth (no curds visible).

  2. Preheat oven – Set to 375°F (190°C). Line a baking sheet with parchment paper.

  3. Spread – Pour the mixture onto the parchment and spread into a thin, even circle or rectangle (about ⅛–¼ inch thick).

  4. Bake – Bake for 15–20 minutes, or until set and lightly golden on the edges.

  5. Cool slightly – Let it cool for a couple of minutes before peeling it off the parchment.

Tips for best texture:

  • For a chewier, breadier bite, add 1 tbsp grated parmesan or mozzarella to the batter.

  • For a firmer, crispier edge, bake a few extra minutes or broil for 1–2 minutes at the end.

  • Store leftovers in the fridge and reheat in a dry skillet for best results.
