Carnivore Flatbread (Cottage Cheese & Egg)
Ingredients (makes 2 small flatbreads)

1 cup (about 225g) full-fat cottage cheese

2 large eggs

Pinch of salt (optional)
Instructions

Blend – Add cottage cheese and eggs to a blender or food processor. Blend until completely smooth (no curds visible).

Preheat oven – Set to 375°F (190°C). Line a baking sheet with parchment paper.

Spread – Pour the mixture onto the parchment and spread into a thin, even circle or rectangle (about ⅛–¼ inch thick).

Bake – Bake for 15–20 minutes, or until set and lightly golden on the edges.

Cool slightly – Let it cool for a couple of minutes before peeling it off the parchment.
Tips for best texture:

For a chewier, breadier bite, add 1 tbsp grated parmesan or mozzarella to the batter.

For a firmer, crispier edge, bake a few extra minutes or broil for 1–2 minutes at the end.

Store leftovers in the fridge and reheat in a dry skillet for best results.
You can use this as:

A wrap for meats or cheese

A pizza base (add toppings, bake again 5–7 min)

Cut into strips as breadsticks
