Cabbage Roll Soup

Here’s a simple and delicious recipe for Cabbage Roll Soup:

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 head of cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook the Ground Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
  2. Sauté the Vegetables: Add the diced onion and minced garlic to the pot and sauté until the onion is translucent, about 5 minutes.
  3. Add Broth and Tomatoes: Stir in the beef broth, tomato sauce, and diced tomatoes. Bring to a boil.
  4. Add Vegetables and Rice: Add the chopped cabbage, sliced carrots, sliced celery, uncooked rice, bay leaf, paprika, thyme, oregano, salt, and pepper. Stir to combine.
  5. Simmer: Reduce the heat to low, cover, and let the soup simmer for about 25-30 minutes, or until the rice and vegetables are tender.
  6. Adjust Seasoning: Taste and adjust the seasoning with more salt and pepper if needed.
  7. Serve: Remove the bay leaf and serve the soup hot. Enjoy!

This hearty soup captures all the flavors of traditional cabbage rolls in a comforting bowl of soup. Enjoy!
