Here’s a delicious recipe for Broccoli and Potato Cheese Soup:
Ingredients:
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups broccoli florets (about 1 large head)
- 2 large potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Optional: 1/2 teaspoon smoked paprika or a pinch of cayenne pepper for extra flavor
Instructions:
- Prepare the Vegetables:
- In a large pot, melt the butter over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Cook the Broccoli and Potatoes:
- Add the broccoli florets and diced potatoes to the pot. Stir to combine with the onions and garlic.
- Pour in the vegetable or chicken broth, bringing the mixture to a boil. Reduce the heat to a simmer and cook until the potatoes and broccoli are tender, about 15-20 minutes.
- Blend the Soup:
- Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth, then return to the pot.
- Add the Cream and Cheese:
- Stir in the heavy cream or milk. Gradually add the shredded cheddar cheese, stirring continuously until melted and well combined.
- Season the soup with salt, pepper, and optional smoked paprika or cayenne pepper to taste.
- Serve:
- Ladle the soup into bowls and garnish with additional shredded cheese, a sprinkle of black pepper, or some fresh herbs if desired.
