Broccoli and Potato Cheese Soup

Here’s a delicious recipe for Broccoli and Potato Cheese Soup:

Ingredients:

  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets (about 1 large head)
  • 2 large potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or milk
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon smoked paprika or a pinch of cayenne pepper for extra flavor

Instructions:

  1. Prepare the Vegetables:
    • In a large pot, melt the butter over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Cook the Broccoli and Potatoes:
    • Add the broccoli florets and diced potatoes to the pot. Stir to combine with the onions and garlic.
    • Pour in the vegetable or chicken broth, bringing the mixture to a boil. Reduce the heat to a simmer and cook until the potatoes and broccoli are tender, about 15-20 minutes.
  3. Blend the Soup:
    • Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth, then return to the pot.
  4. Add the Cream and Cheese:
    • Stir in the heavy cream or milk. Gradually add the shredded cheddar cheese, stirring continuously until melted and well combined.
    • Season the soup with salt, pepper, and optional smoked paprika or cayenne pepper to taste.
  5. Serve:
    • Ladle the soup into bowls and garnish with additional shredded cheese, a sprinkle of black pepper, or some fresh herbs if desired.
