🫐 Blueberry Biscuits Recipe
Yield: 8 biscuits
Prep Time: 10 minutes
Cook Time: 18–20 minutes
Total Time: ~30 minutes
Ingredients:
-
2 cups all-purpose flour
-
1 tbsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
3 tbsp granulated sugar
-
½ cup (1 stick) unsalted butter, cold and cubed
-
¾ cup buttermilk (plus extra if needed)
-
1 cup fresh or frozen blueberries (if frozen, don’t thaw)
-
Optional: 1 tbsp coarse sugar for topping
Instructions:
-
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
-
Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
-
Cut in the butter: Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
-
Add buttermilk: Pour in the buttermilk and gently mix until just combined. If the dough feels too dry, add 1–2 tablespoons more buttermilk.
-
Fold in blueberries: Gently fold in the blueberries, being careful not to overmix.
-
Shape the dough: Turn the dough onto a floured surface and pat it into a 1-inch thick rectangle. Fold it over itself a few times to create layers, then gently pat it down again. Cut out biscuits using a round cutter or a glass.
-
Bake: Place the biscuits on the prepared sheet, close together for soft sides or spaced apart for crisp edges. Sprinkle with coarse sugar if desired.
-
Bake for 18–20 minutes, or until golden brown.
-
Cool slightly and enjoy: Serve warm with butter, honey, or a drizzle of icing for extra indulgence.
🍯 Optional Sweet Glaze:
Mix ½ cup powdered sugar with 1–2 tbsp milk or lemon juice and drizzle over the biscuits once they’ve cooled slightly.
