Beef Stuffed Buns

These Beef Stuffed Buns are perfect for a quick dinner, meal prep, or a hearty snack. Inspired by flavors from classic beef pies, this recipe is a blend of simplicity and satisfaction. Serve them warm with your favorite dipping sauce.

Ingredients

For the dough:

  • 3 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 cup warm milk (about 110°F/45°C)
  • 2 tbsp unsalted butter, melted
  • 1 large egg

For the beef filling:

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup diced vegetables (carrots, peas, or bell peppers, optional)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • ½ tsp ground cumin (optional)
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley or cilantro, chopped (optional)
  • 1 tbsp oil for cooking

For topping:

  • 1 egg, beaten (for egg wash)
  • Sesame seeds (optional)
  • Instructions

    1. Make the dough:

    1. In a large mixing bowl, combine the flour, yeast, sugar, and salt.
    2. Add the warm milk, melted butter, and egg. Mix until the dough comes together.
    3. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
    4. Place the dough in a greased bowl, cover with a damp towel, and let it rise in a warm spot for 1–2 hours, or until doubled in size.

    2. Prepare the filling:

    1. Heat oil in a skillet over medium heat. Add the onions and garlic, cooking until softened.
    2. Add the ground beef and cook until browned. Drain excess fat if needed.
    3. Stir in the tomato paste, paprika, cumin, salt, and pepper. Add any diced vegetables, cooking until tender.
    4. Remove from heat, mix in fresh herbs (if using), and let the filling cool.

    3. Assemble the buns:

    1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
    2. Punch down the risen dough and divide it into 12 equal pieces.
    3. Roll each piece into a ball and flatten into a 4-inch circle.
    4. Place a spoonful of the beef filling in the center and pinch the edges of the dough to seal it tightly. Shape it into a bun.
    5. Place the buns seam-side down on the baking sheet.

    4. Bake:

    1. Brush each bun with beaten egg and sprinkle sesame seeds on top (if using).
    2. Bake in the preheated oven for 20–25 minutes, or until golden brown.
    3. Allow to cool slightly before serving.
    4. Tips:

      • For extra flavor, add shredded cheese to the filling before sealing the buns.
      • These buns freeze beautifully—just reheat them in the oven or microwave when ready to eat.
