Ingredients
For the dough:
- 3 ½ cups all-purpose flour
- 1 packet (2 ¼ tsp) instant yeast
- 2 tbsp sugar
- 1 tsp salt
- 1 cup warm milk (about 110°F/45°C)
- 2 tbsp unsalted butter, melted
- 1 large egg
For the beef filling:
- 1 lb (450g) ground beef
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 cup diced vegetables (carrots, peas, or bell peppers, optional)
- 2 tbsp tomato paste
- 1 tsp paprika
- ½ tsp ground cumin (optional)
- Salt and pepper, to taste
- 2 tbsp fresh parsley or cilantro, chopped (optional)
- 1 tbsp oil for cooking
For topping:
- 1 egg, beaten (for egg wash)
- Sesame seeds (optional)

Instructions
1. Make the dough:
- In a large mixing bowl, combine the flour, yeast, sugar, and salt.
- Add the warm milk, melted butter, and egg. Mix until the dough comes together.
- Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp towel, and let it rise in a warm spot for 1–2 hours, or until doubled in size.
2. Prepare the filling:
- Heat oil in a skillet over medium heat. Add the onions and garlic, cooking until softened.
- Add the ground beef and cook until browned. Drain excess fat if needed.
- Stir in the tomato paste, paprika, cumin, salt, and pepper. Add any diced vegetables, cooking until tender.
- Remove from heat, mix in fresh herbs (if using), and let the filling cool.
3. Assemble the buns:
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into 12 equal pieces.
- Roll each piece into a ball and flatten into a 4-inch circle.
- Place a spoonful of the beef filling in the center and pinch the edges of the dough to seal it tightly. Shape it into a bun.
- Place the buns seam-side down on the baking sheet.
