Ingredients:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 can (10 oz) enchilada sauce (red or green)
- 1 can (4 oz) diced green chiles (optional)
- 2 cups shredded Mexican blend cheese (or cheddar)
- 8-10 flour or corn tortillas
- 1/2 cup sour cream (optional)
- 2 tablespoons oil (for tortillas)
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
Instructions:
- Prepare the beef filling:
- In a large skillet, heat a bit of oil over medium heat. Add the diced onion and garlic, sautéing until soft and fragrant (about 3 minutes).
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Stir in the taco seasoning and diced green chiles (if using). Cook for another 2 minutes, ensuring the beef is fully seasoned. Set aside.
- Prepare the tortillas:
- If using corn tortillas, lightly fry each tortilla in a bit of oil for about 10 seconds on each side to soften them. Drain on paper towels. For flour tortillas, you can skip this step or heat them briefly in a dry pan.
- Assemble the enchiladas:
- Preheat the oven to 375°F (190°C).
- Spread a small amount of enchilada sauce at the bottom of a 9×13 baking dish.
- Place about 2-3 tablespoons of the beef mixture into each tortilla, add a sprinkle of cheese, and roll them up tightly. Place seam side down in the baking dish.
- Once all enchiladas are rolled, pour the remaining enchilada sauce evenly over the top.

- Bake:
