Ingredients:
- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 packet taco seasoning (or homemade)
- 1 can (10 oz) enchilada sauce
- 8 small flour or corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend), divided
- ½ cup sour cream (optional)
- Fresh cilantro for garnish
Instructions:
- Preheat the oven to 350°F (175°C).
- Cook the beef: In a large skillet, sauté the ground beef over medium heat until browned. Add the diced onion and garlic, cooking until softened. Drain any excess fat.
- Season the beef: Stir in the taco seasoning and a little water (as per the package instructions), letting it simmer for a few minutes. Add ½ cup of the enchilada sauce to the beef mixture and mix well. Set aside.
- Assemble the enchiladas: Warm the tortillas to make them pliable (you can microwave them between damp paper towels). Fill each tortilla with a few tablespoons of the beef mixture and a sprinkle of cheese. Roll them up and place them seam-side down in a baking dish.
- Add the sauce and cheese: Pour the remaining enchilada sauce evenly over the top of the rolled enchiladas. Sprinkle the remaining cheese generously on top.
- Bake: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is fully melted and bubbling.
