Beef and Bean Burritos with Red Chile Sauce

these Beef and Bean Burritos with Red Chile Sauce are perfect! The tender, seasoned beef and creamy beans wrapped in a warm tortilla, all smothered in a rich, smoky red chile sauce, make for a comforting and delicious dish.

Ingredients

For the Burritos:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 can (15 oz) refried beans
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas

For the Red Chile Sauce:

  • 2 tbsp vegetable oil
  • 2 tbsp all-purpose flour
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 cups beef broth
  • 1 can (8 oz) tomato sauce
  • Salt and pepper to taste

Instructions

  1. Prepare the Filling:

    • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
    • Add the onion and garlic; cook until softened.
    • Stir in cumin, chili powder, salt, and pepper. Mix well.
    • Add refried beans and combine until heated through. Remove from heat.
  2. Make the Red Chile Sauce:

    • Heat oil in a saucepan over medium heat.
    • Stir in flour and cook for 1 minute until lightly golden.
    • Add chili powder, cumin, and oregano, stirring for another 30 seconds.
    • Slowly whisk in beef broth and tomato sauce. Bring to a simmer and cook for 5–7 minutes until slightly thickened. Season with salt and pepper.
  3. Assemble the Burritos:

    • Preheat oven to 375°F (190°C).
    • Spoon beef and bean mixture into the center of each tortilla. Sprinkle with cheese.
    • Roll up the tortillas, tucking in the sides, and place seam-side down in a baking dish.
  4. Bake and Serve:

    • Pour the red chile sauce over the burritos, covering them evenly.
    • Bake for 15 minutes until heated through.
    • Garnish with additional cheese, cilantro, or sour cream, if desired.
