Baked salmon in foil with asparagus and lemon garlic butter sauce is a delicious and healthy meal! Here’s a simple recipe to make it:
Ingredients:
- 2 salmon fillets (skin-on or skinless)
- 1 bunch asparagus, trimmed
- 1 lemon, thinly sliced
- 4 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (such as parsley or dill), optional for garnish
Instructions:
- Preheat oven to 400°F (200°C).
- Prepare the foil packets:
- Lay out a large piece of aluminum foil for each salmon fillet.
- Place a few asparagus spears in the center of each foil sheet.
- Make the lemon garlic butter sauce:
- In a small bowl, combine the melted butter, minced garlic, olive oil, salt, and pepper. Stir well.
- Assemble the packets:
- Place one salmon fillet on top of the asparagus.
- Drizzle the lemon garlic butter sauce over the salmon fillet.
- Add a couple of thin lemon slices on top of the salmon.
- Fold the sides of the foil over the salmon and asparagus, creating a tightly sealed packet.
- Bake:
- Place the foil packets on a baking sheet and bake for about 15-20 minutes, or until the salmon is cooked through (it should easily flake with a fork).
- Serve:
- Carefully open the foil packets, being cautious of the steam. Garnish with fresh herbs and serve with additional lemon wedges on the side.
