Authentic Chili Verde Recipe

Ingredients:

  • 2 lbs pork shoulder, cut into 1-inch cubes
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 pounds tomatillos, husked and rinsed
  • 2-3 poblano peppers, roasted, peeled, and chopped
  • 2-3 jalapeño peppers, seeded and chopped
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

Instructions:

  1. Prepare the Ingredients:
    • Season the pork cubes with salt and pepper.
    • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the pork in batches, browning on all sides. Remove the pork and set aside.
  2. Sauté the Aromatics:
    • In the same pot, add the chopped onion and sauté until translucent, about 5 minutes.
    • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Prepare the Green Sauce:
    • While the onion and garlic are cooking, roast the tomatillos under a broiler or on a grill until charred and softened.
    • In a blender or food processor, combine the roasted tomatillos, poblano peppers, jalapeños, and chicken broth. Blend until smooth.
  4. Combine and Simmer:
    • Return the browned pork to the pot with the onions and garlic.
    • Pour the green sauce over the pork.
    • Add the ground cumin, dried oregano, and ground coriander.
    • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the pork is tender.
  5. Finish and Serve:
    • Stir in the chopped cilantro and lime juice.
    • Adjust seasoning with additional salt and pepper if needed.
    • Serve hot with rice, beans, and warm tortillas.
