Ingredients:

For the Apple Filling:

  • 2 apples (peeled and chopped, about 1½ cups)

  • 2 tbsp granulated sugar

  • 1 tsp ground cinnamon

For the Batter:

  • 1/3 cup light brown sugar

  • 1 tsp ground cinnamon

  • 1/2 cup (1 stick) unsalted butter, softened

  • 2/3 cup granulated sugar

  • 2 eggs

  • 1½ tsp vanilla extract

  • 1½ cups all-purpose flour

  • 1¾ tsp baking powder

  • 1/2 cup milk

For the Glaze:

  • 1/2 cup powdered sugar

  • 1–2 tbsp milk or cream

  • 1/4 tsp vanilla extract

  • Instructions:

    1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

    2. Prepare the apple filling: In a bowl, toss chopped apples with 2 tbsp sugar and 1 tsp cinnamon. Set aside.

    3. Make cinnamon sugar: In a small bowl, mix brown sugar and 1 tsp cinnamon. Set aside.

    4. Prepare the batter:

      • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

      • Beat in eggs, one at a time, then mix in vanilla.

      • In another bowl, whisk together flour and baking powder.

      • Gradually add flour mixture to the wet ingredients, alternating with milk, until just combined.

    5. Assemble the bread:

      • Pour half the batter into the loaf pan.

      • Sprinkle half the cinnamon sugar mixture over the batter, then layer half the apples.

      • Repeat with the remaining batter, cinnamon sugar, and apples.

      • Lightly press the top apple layer into the batter and swirl with a knife.

    6. Bake: Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack.

    7. Make the glaze: Mix powdered sugar, vanilla, and just enough milk to form a smooth glaze. Drizzle over the cooled bread.

      Tips:

      • Use a tart apple like Granny Smith for the best flavor balance.

      • Store leftovers wrapped at room temp for up to 2 days or refrigerate for 4–5 days.

      • Enjoy this cozy, bakery-style treat warm with a cup of coffee or cold with a scoop of vanilla ice cream!
