AMISH BAKED CUSTARD

Posted on August 2, 2024

Amish Baked Custard is a timeless recipe that brings together simple ingredients in a comforting, delicious dish. This classic custard hails from the heart of Amish country, where the emphasis on wholesome, straightforward cooking shines through. It’s a perfect example of how a few basic ingredients—milk, eggs, sugar, and vanilla—can come together to create something truly special.

Ingredients:

  • 4 large eggs: These are the foundation of the custard, providing both structure and richness. Make sure they are at room temperature for the best results.
  • 2 cups whole milk: Whole milk adds a creamy texture that’s essential for a smooth custard. You can substitute with 2% milk, but the result will be slightly less rich.
  • 1/2 cup granulated sugar: This sweetens the custard and balances the flavor. You can adjust the amount according to your taste preference.
  • 1 teaspoon vanilla extract: Vanilla adds a warm, aromatic flavor that enhances the custard. Opt for pure vanilla extract for the best taste.
  • 1/4 teaspoon ground nutmeg: Nutmeg is a classic spice in custard recipes, giving a subtle, warm spice that complements the sweetness.

Instructions:

  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C). This ensures that your custard will bake evenly and set properly.
  2. Prepare the Baking Dish: Lightly grease a 1½-quart baking dish or a similar-sized dish with butter. This helps prevent sticking and makes serving the custard easier.
  3. Mix the Custard Base: In a medium-sized bowl, whisk together the eggs until they are well beaten. Add the sugar and whisk until fully combined. Pour in the milk and vanilla extract, continuing to whisk until the mixture is smooth and uniform.
  4. Pour and Spice: Pour the custard mixture into the prepared baking dish. To finish, lightly sprinkle the ground nutmeg over the top of the custard. This adds a beautiful aroma and a touch of spice that’s characteristic of traditional baked custard.
  5. Bake the Custard: Place the baking dish in the oven and bake for about 45-50 minutes. The custard is done when it is set in the center and a knife inserted into the middle comes out clean. The top should be slightly golden and may have a few cracks, which is perfectly normal.
  6. Cool and Serve: Allow the custard to cool to room temperature before serving. This lets the flavors meld together and ensures the custard has the perfect texture. You can serve it warm or chilled, depending on your preference. It’s delightful on its own, or you might pair it with a dollop of whipped cream or fresh fruit for added flair.

Tips and Variations:

  • Additions: Feel free to experiment with other flavors such as cinnamon or a splash of rum for a different twist.
  • Texture: For a smoother texture, strain the custard mixture through a fine-mesh sieve before baking to remove any bits of egg white.
  • Serving: Baked custard can be served as a dessert or even a sweet breakfast treat. It pairs wonderfully with a cup of coffee or tea.
