Loaded Steak Quesadillas offer a delightful combination of sizzling steak, melted cheese, and sautéed vegetables, all packed into a crispy tortilla. Ingredients:
- 1 lb steak (sirloin or flank)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup shredded cheese (cheddar, Monterey jack, or a blend)
- 4 large flour tortillas
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 jalapeño, sliced (optional)
- Sour cream, guacamole, and salsa, for serving
Instructions:
- Heat olive oil in a skillet over medium-high heat. Season the steak with chili powder, cumin, garlic powder, paprika, salt, and pepper.
- Cook the steak for 4-5 minutes per side until desired doneness. Let it rest for 5 minutes before slicing thinly.
- In the same skillet, cook bell peppers and onions until soft (about 5 minutes). Remove from heat.
- Heat another large skillet or griddle over medium heat. Place a tortilla on the skillet and sprinkle with cheese.
- Add a layer of steak slices, sautéed veggies, and jalapeños (if using) on top of the cheese.
- Top with another layer of cheese, then place another tortilla on top. Cook for 2-3 minutes per side until golden brown and crispy.
- Repeat with remaining tortillas and ingredients.
- Slice into wedges and serve with sour cream, guacamole, and salsa.
