Garlic Butter Steak and Potatoes

Ingredients:

  • 1 1/2 lbs sirloin steak, cut into 1-inch pieces
  • 1 lb baby potatoes, halved
  • 4 tablespoons butter, divided
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon rosemary, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Boil the potatoes in salted water for 10-15 minutes until fork-tender. Drain and set aside.
  2. In a large skillet over medium-high heat, melt 2 tablespoons of butter and olive oil. Add the steak pieces in a single layer and sear for about 3 minutes per side until browned and cooked to your liking. Remove the steak from the skillet and set aside.
  3. In the same skillet, melt the remaining 2 tablespoons of butter. Add the garlic, thyme, rosemary, and potatoes. Sauté for 5-7 minutes until the potatoes are golden and crispy. Season with salt and pepper.
  4. Return the steak to the skillet, stir to coat everything in the garlic butter, and cook for an additional 2 minutes.
