Caprese Chicken

Caprese Chicken is a delicious and straightforward dish that combines the flavors of a classic Caprese salad with juicy chicken. Here’s a basic recipe for you to try:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella, sliced or in small balls
  • Fresh basil leaves
  • Balsamic glaze or balsamic vinegar, for drizzling

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  2. Cook the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken breasts and cook for about 6-7 minutes per side, or until the chicken is cooked through and no longer pink in the middle.
  3. Add Tomatoes and Mozzarella:
    • Reduce the heat to medium.
    • Add the cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.
    • Top each chicken breast with slices of mozzarella or place small mozzarella balls around the chicken.
  4. Melt the Cheese:
    • Cover the skillet with a lid and cook for another 2-3 minutes until the mozzarella is melted.
  5. Add Basil and Balsamic:
    • Remove from heat and top with fresh basil leaves.
    • Drizzle with balsamic glaze or vinegar before serving.
  6. Serve:
    • Serve hot with a side of your choice, such as a fresh salad, steamed vegetables, or a light pasta dish.
