Low-Carb Cheeseburger Casserole

Here’s a tasty low-carb cheeseburger casserole recipe that’s easy to make and full of flavor:

Ingredients:

  • 1 lb (450g) ground beef
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • 3 large eggs
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved (optional)
  • 1/2 cup pickles, chopped (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the diced onion and cook until softened. Stir in the minced garlic and cook for another minute.
  3. Mix Ingredients: In a large bowl, combine the cooked beef mixture with Worcestershire sauce, Dijon mustard, paprika, salt, and pepper.
  4. Prepare Casserole Base: In a separate bowl, whisk together the heavy cream and eggs until well combined. Stir in half of the shredded cheddar cheese and all of the shredded mozzarella cheese.
  5. Assemble Casserole: Spread the beef mixture evenly in a greased baking dish. Pour the cream and cheese mixture over the beef. Spread the remaining cheddar cheese on top.
  6. Bake: Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is golden brown.
  7. Add Optional Toppings: If desired, top with cherry tomatoes and pickles during the last 5 minutes of baking.
  8. Serve: Let the casserole cool for a few minutes before serving. Enjoy!
