Ingredients:

  • 2 large chicken breasts, boneless and skinless
  • 8 oz (225g) pasta (penne, fettuccine, or your favorite)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1 cup (240ml) chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup (100g) shredded mozzarella cheese
  • 1/4 cup (25g) grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions:

  1. Cook the Pasta:
    • Cook the pasta according to the package instructions. Drain and set aside.
  2. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, and Italian seasoning.
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the chicken breasts and cook for 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside to rest.
  3. Make the Sauce:
    • In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until softened.
    • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.

  4. Combine:
    • Slice the cooked chicken breasts into strips.
    • Add the pasta and sliced chicken to the skillet, tossing to coat everything in the creamy sauce.
    • Cook for an additional 2-3 minutes until everything is heated through.
  5. Serve:
    • Garnish with fresh basil or parsley.
    • Serve immediately with extra Parmesan on the side if desired.
