Cheesy Baked Zucchini

Ingredients:

  • 3 medium zucchinis, sliced into ½-inch rounds

  • 2 tbsp olive oil

  • ½ tsp garlic powder

  • ½ tsp Italian seasoning (or mix of oregano, thyme, basil)

  • Salt and black pepper to taste

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • Optional garnish: chopped parsley or red pepper flakes


Instructions:

  1. Preheat Oven:
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

  2. Prepare Zucchini:
    Wash and slice the zucchinis into even rounds or lengthwise strips. Place them in a large bowl.

  3. Season:
    Drizzle olive oil over the zucchini. Sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss until the zucchini is evenly coated.

  4. Arrange & Bake:
    Spread the zucchini slices in a single layer on the baking sheet. Bake for 10–12 minutes until slightly tender.

  5. Add Cheese:
    Remove the tray from the oven. Sprinkle mozzarella and Parmesan cheese generously over the zucchini.

  6. Bake Again:
    Return to the oven and bake for another 5–7 minutes, or until the cheese is melted, bubbly, and lightly golden.

  7. Serve:
    Garnish with chopped parsley or a pinch of red pepper flakes for a bit of heat. Serve hot!
