Gluten-Free Beef Stroganoff

Ingredients:

  • 1 lb (450 g) beef sirloin or tenderloin, thinly sliced into strips

  • 2 tbsp olive oil or butter

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 8 oz (225 g) mushrooms, sliced (cremini or button work best)

  • 1 cup beef broth (gluten-free)

  • 1 tbsp gluten-free Worcestershire sauce (or coconut aminos)

  • 1 tsp Dijon mustard (check label for gluten-free)

  • 1 cup sour cream (or Greek yogurt for lighter option)

  • 2 tsp cornstarch mixed with 2 tbsp water (optional, for thickening)

  • Salt & black pepper, to taste

  • Fresh parsley, chopped (for garnish)

For Serving:

  • Gluten-free egg noodles, rice, or mashed potatoes


Instructions:

  1. Cook the Beef:
    Heat 1 tbsp oil/butter in a skillet over medium-high heat. Sear the beef strips for 2–3 minutes until browned but not overcooked. Remove and set aside.

  2. Sauté Vegetables:
    In the same pan, add the remaining oil/butter. Cook onions until softened (about 3 minutes), then add garlic and mushrooms. Sauté until mushrooms are golden.

  3. Make the Sauce:
    Pour in beef broth, Worcestershire, and Dijon mustard. Stir and let simmer 5–7 minutes. If you prefer a thicker sauce, add the cornstarch slurry and simmer until thickened.

  4. Add Sour Cream & Beef:
    Reduce heat to low. Stir in sour cream until smooth and creamy. Return beef to the pan, gently stir, and cook 2–3 minutes to warm through. Season with salt and pepper.

  5. Serve:
