  • 1 cup liquid animal fat (beef tallow, melted duck fat, bacon grease, or ghee) – cooled but still pourable

  • 1 tsp apple cider vinegar or fresh lemon juice (optional, but adds tang; omit if you want strict zero-plant)

  • ½ tsp salt (use mineral-rich sea salt)

Optional for flavor:

  • A pinch of white pepper

  • ½ tsp Dijon mustard (not strict carnivore, but helps emulsify)


Instructions

  1. In a bowl or blender, whisk the egg yolks until smooth.

  2. Slowly drizzle in the melted fat, just a few drops at a time, while blending/whisking continuously. This helps the emulsion form.

  3. As it thickens, keep pouring in the fat in a thin, steady stream until fully incorporated.

  4. Add salt (and vinegar/lemon if using). Blend again until creamy.

  5. Transfer to a clean jar and refrigerate.


Storage:
