Ingredients

  • 1 cup active sourdough starter (fed and bubbly)

  • 2 ½ cups all-purpose flour (plus extra for dusting)

  • ½ cup milk, lukewarm

  • ¼ cup sugar

  • 2 tbsp unsalted butter, softened

  • 1 egg

  • ½ tsp salt

  • 1 tsp vanilla extract

  • Oil for frying (vegetable or canola)

Optional Coatings:

  • Cinnamon sugar

  • Powdered sugar

  • Glaze (powdered sugar + milk + vanilla)


Instructions

  1. Mix the Dough

    • In a mixing bowl, combine sourdough starter, milk, sugar, butter, egg, salt, and vanilla.

    • Gradually add flour and mix until a soft dough forms.

  2. Knead and Rise

    • Knead the dough on a floured surface for 5–7 minutes until smooth and elastic.

    • Place in a greased bowl, cover, and let it rise at room temperature for 3–4 hours (or overnight in the fridge) until doubled in size.

  3. Shape the Donuts

    • Roll the dough to about ½-inch thickness.

    • Cut out donuts with a donut cutter (or use a large and small round cutter for rings).

    • Place cut donuts on a floured tray, cover, and let them rest for 30–45 minutes until slightly puffy.

  4. Fry the Donuts

    • Heat oil to 350°F (175°C) in a deep pan.

    • Fry donuts in batches, about 1–2 minutes per side, until golden brown.

    • Drain on a paper towel-lined plate.

  5. Coat & Serve

    • While still warm, toss donuts in cinnamon sugar, dust with powdered sugar, or dip in glaze.


Tips

  • If you want extra fluffy donuts, let the shaped donuts proof longer until very airy.

  • For a healthier version, you can air-fry or bake them at 375°F (190°C) for 10–12 minutes, then glaze.

  • Use leftover sourdough starter discard for a mild tang, or active starter for a stronger rise.
