🌽 Corn Cake Recipe

Ingredients:

  • 1 cup cornmeal (yellow or white)

  • 1 cup all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • ½ cup sugar (add more if you like it sweeter)

  • 2 large eggs

  • 1 cup milk (whole or buttermilk for richness)

  • ½ cup unsalted butter, melted (or neutral oil)

  • 1 cup corn kernels (fresh, canned, or frozen)

  • 1 teaspoon vanilla extract (optional, for sweetness)

  • 2 tablespoons honey (optional, for extra flavor)


Instructions:

  1. Preheat oven to 350°F (175°C). Grease or line an 8-inch square baking pan.

  2. Mix dry ingredients: In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.

  3. Mix wet ingredients: In another bowl, beat eggs, then whisk in milk, melted butter, vanilla, and honey (if using).

  4. Combine: Stir wet mixture into dry until just combined. Fold in the corn kernels.

  5. Bake: Pour batter into the pan. Bake for 30–35 minutes, or until golden and a toothpick inserted in the center comes out clean.
