Garlic Butter Linguine with Cheesy Beef and Italian Sausage

Ingredients (4 servings):

  • 12 oz (340 g) linguine pasta

  • 2 tbsp olive oil

  • 1 lb ground beef

  • ½ lb Italian sausage (mild or hot, casings removed)

  • 1 medium onion, finely chopped

  • 5 cloves garlic, minced (divided: 3 for sauce, 2 for pasta)

  • 1 tsp crushed red pepper flakes (optional, for heat)

  • 1 can (14 oz) crushed tomatoes

  • ½ cup beef broth

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • Salt and black pepper, to taste

  • 3 tbsp unsalted butter

  • ½ cup heavy cream

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 2 tbsp fresh parsley, chopped

  • Extra Parmesan for serving

Instructions:

  1. Cook the Pasta:
Bring a large pot of salted water to a boil. Cook linguine until al dente. Reserve ½ cup pasta water, then drain.

  2. Brown the Meats:
In a large skillet, heat olive oil over medium heat. Add ground beef and Italian sausage. Cook until browned, breaking into crumbles with a wooden spoon. Drain excess fat.

  3. Build the Sauce:
Add onion and 3 cloves minced garlic to the skillet with the meat. Cook 3–4 minutes until softened. Stir in crushed tomatoes, beef broth, oregano, basil, red pepper flakes, salt, and black pepper. Simmer 10–12 minutes until thickened.

  4. Make it Cheesy:
Reduce heat to low. Stir in heavy cream, mozzarella, and Parmesan until melted into the sauce. Keep warm.

  5. Garlic Butter Pasta Base:
In a separate large pan, melt butter over medium heat. Add remaining 2 cloves garlic and sauté until fragrant (about 1 minute). Toss in the drained linguine with a splash of pasta water to coat the noodles in the garlic butter.

  6. Combine:
Pour the cheesy beef and sausage sauce over the garlic butter linguine. Toss gently to combine.

  7. Serve:
Sprinkle with parsley and extra Parmesan. Serve hot with garlic bread or a crisp salad.

Optional Variations:

  • Add baby spinach or kale to the sauce for a veggie boost.

  • Swap mozzarella for provolone or fontina for a different cheesy depth.

  • Use spicy Italian sausage if you love heat.
