Here’s a fluffy, cheesy bread recipe that’s rich, soft inside, and golden with a cheesy crust. You can bake it as a loaf or shape it into rolls.

Ingredients

  • 3 cups (375g) all-purpose flour (or bread flour for extra chew)

  • 2 tsp sugar

  • 1 tsp salt

  • 2 ¼ tsp instant yeast (1 packet)

  • 1 cup (240ml) warm milk (about 110°F / 43°C)

  • 2 tbsp unsalted butter, softened

  • 1 ½ cups shredded cheese (cheddar, mozzarella, or a mix) – divided

  • 1 egg (for egg wash, optional)


Instructions

  1. Activate Yeast (if using active dry)

    • In a bowl, combine warm milk, sugar, and yeast. Let sit 5–10 min until foamy.
      (Skip this step for instant yeast — mix directly with dry ingredients.)

  2. Make Dough

    • In a large bowl, mix flour, salt, butter, yeast mixture (or instant yeast), and half the cheese.

    • Knead for 8–10 min (by hand or mixer) until smooth and elastic.

    • If dough is sticky, add a tablespoon of flour at a time.

  3. First Rise

    • Place dough in a greased bowl, cover, and let rise in a warm spot for 1–1.5 hours, until doubled.

  4. Shape & Fill

    • Punch down dough, shape into a loaf or divide into rolls.

    • Sprinkle remaining cheese on top (and a little inside if you want cheesy pockets).

  5. Second Rise

    • Place shaped dough in greased loaf pan or on baking sheet. Cover and let rise 30–45 min until puffy.

  6. Bake

    • Preheat oven to 375°F (190°C).

    • Brush with egg wash for shine (optional), then bake for 25–30 min for a loaf, 18–20 min for rolls, until golden and cheese is melted.

  7. Cool Slightly & Serve

    • Let cool for 10–15 min before slicing. Best enjoyed warm.

  • Add garlic powder, parsley, or chili flakes to the dough for extra flavor.

  • For extra gooeyness, stuff small cubes of cheese into the dough during shaping.

  • You can replace half the milk with sour cream or yogurt for tangy richness.
