Ingredients (2 servings)

  • 1 cup fresh blueberries (or thawed frozen)

  • 1 cup Greek yogurt (plain or vanilla)

  • 2–3 tbsp honey or maple syrup (optional)

  • ½ tsp lemon zest (optional, for brightness)

  • ½ cup granola

  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the blueberries – If you want them sweeter, toss with 1 tbsp honey or maple syrup and the lemon zest. Let sit for 5 minutes.

  2. Layer the parfait – In two clear glasses or jars, add a spoonful of yogurt to the bottom.

  3. Add a layer of blueberries, then a sprinkle of granola.

  4. Repeat layers until the glasses are full, ending with blueberries on top.

  5. Finish & serve – Drizzle with extra honey and garnish with mint leaves. Serve immediately for crunch, or refrigerate for a softer texture.

Tip: For a dessert twist, swap Greek yogurt for vanilla pudding or whipped cream.
