Roasted Tomato Salsa

🌶 Roasted Tomato Salsa

Ingredients

  • 6 medium ripe tomatoes

  • 3 cloves garlic (unpeeled)

  • 1 small white onion, quartered

  • 2–3 fresh jalapeños or serrano peppers (adjust to heat preference)

  • 2 tbsp fresh lime juice

  • ½ cup fresh cilantro leaves

  • 1 tsp salt (or to taste)

  • Optional: ½ tsp ground cumin for extra depth

Instructions

  1. Roast the veggies:

    • Preheat oven to 220°C (425°F) or heat a grill pan.

    • Place tomatoes, onion, jalapeños, and garlic on a baking tray.

    • Roast for 15–20 minutes, turning halfway, until skins are blistered and charred.

  2. Peel garlic:

    • Once cool enough to handle, peel the roasted garlic cloves.

  3. Blend:

    • In a blender or food processor, combine roasted tomatoes, onion, jalapeños, garlic, lime juice, cilantro, and salt.

    • Blend until smooth or leave slightly chunky for texture.

  4. Taste & adjust:

    • Add more salt or lime juice as needed.

  5. Serve:

    • Enjoy warm or chilled with tortilla chips, tacos, grilled meats, or over eggs.

Tip: For an even smokier flavor, roast the vegetables directly over an open flame or on a grill.
