MONTEREY SAUSAGE PIE

Ingredients:

  • 1 lb (450g) bulk pork sausage (mild or spicy, your choice)

  • 1 cup (115g) shredded Monterey Jack cheese

  • 1 cup (115g) shredded Cheddar cheese

  • 1/2 cup chopped onion

  • 1/4 cup chopped green bell pepper

  • 1 tablespoon all-purpose flour (or gluten-free flour)

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 4 large eggs

  • 1 cup milk

  • 1 unbaked 9-inch pie shell (or make it crustless for low-carb)

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a skillet, cook sausage, onion, and bell pepper over medium heat until sausage is browned and vegetables are soft. Drain excess grease.

  3. Spread the sausage mixture evenly in the bottom of the unbaked pie shell or greased pie plate if crustless.
