🧾 Ingredients:

  • ¾ cup gluten-free all-purpose flour (with xanthan gum)

  • ¾ cup granulated sugar

  • ½ cup plain yogurt or sour cream

  • ½ cup olive oil (or neutral oil)

  • 3 large eggs (room temp)

  • 1 tsp vanilla extract

  • 1 tsp lemon zest (optional but lovely)

  • 1½ tsp baking powder

  • ¼ tsp salt
