Ingredients:

  • 1 ripe avocado (mashed, about ½ cup)

  • 2 large eggs

  • ¼ cup maple syrup or honey

  • 1½ cups gluten-free all-purpose flour (with xanthan gum)

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp cinnamon (optional)

  • ¼ tsp salt

  • ¼ cup chopped nuts or chocolate chips (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
