  • Pinch of salt

For the White German Chocolate Cake:

  • 2½ cups cake flour (or GF blend if needed)

  • 2½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ¾ cup unsalted butter, softened

  • 1¾ cups granulated sugar

  • 4 egg whites

  • 1 tsp vanilla extract

  • ¾ cup buttermilk

  • ½ cup sour cream

  • 4 oz white German baking chocolate, melted and cooled

For the Coconut-Pecan Frosting:

  • 1 cup evaporated milk

  • 1 cup sugar

  • 3 large egg yolks

  • ½ cup unsalted butter

  • 1½ tsp vanilla extract

  • 1 cup chopped pecans

  • 1½ cups sweetened shredded coconut

🔪 Instructions

1. Make the Cheesecake Layer:

  1. Preheat oven to 325°F (165°C). Grease and line an 8-inch springform pan.

  2. Beat cream cheese and sugar until smooth.

  3. Add eggs one at a time, then mix in sour cream, vanilla, and salt.

  4. Pour into pan, bake for 35–40 minutes or until set. Let cool, then chill at least 2 hours or overnight.

2. Make the Cake Layers:

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.

  2. In a bowl, sift flour, baking powder, baking soda, and salt.

  3. In another bowl, cream butter and sugar until fluffy. Add egg whites one at a time.

  4. Mix in vanilla, melted white German chocolate, sour cream, and buttermilk.

  5. Add dry ingredients gradually, mix until just combined.

  6. Divide batter into pans and bake 25–28 minutes. Cool completely.

3. Make Coconut-Pecan Frosting:

  1. In a saucepan, combine evaporated milk, sugar, egg yolks, and butter. Cook over medium heat, stirring constantly, until thickened (about 10 minutes).

  2. Remove from heat, stir in vanilla, pecans, and coconut. Let cool.

🎂 Assembly

  1. Place one white cake layer on a serving plate.

  2. Carefully place the chilled cheesecake layer on top.

  3. Add the second cake layer on top of the cheesecake.

  4. Frost the top and sides with coconut-pecan frosting.

  5. Optional: Garnish with extra coconut and chopped pecans.

📝 Tips

  • For easier slicing, chill the whole assembled cake for 1–2 hours before serving.

  • White German chocolate can be substituted with white baking chocolate if needed.
