Ingredients
For the Dough:

2 cups gluten-free all-purpose flour (with xanthan gum)

2 tbsp granulated sugar

2¼ tsp instant yeast (1 packet)

½ tsp salt

¾ cup warm milk (110°F / 45°C)

¼ cup melted butter

1 large egg
For the Filling:

¼ cup softened butter

½ cup brown sugar

1 tbsp ground cinnamon
For the Glaze:

½ cup powdered sugar

1–2 tbsp milk

½ tsp vanilla extract

Instructions

Make the Dough:
In a bowl, mix flour, sugar, yeast, and salt. Add warm milk, melted butter, and the egg. Stir until a sticky dough forms. -
Roll It Out:
Lightly flour a surface (use more gluten-free flour) and roll the dough into a rectangle (about ¼ inch thick). If the dough is too sticky, place it between two sheets of parchment paper to roll. -
Add the Filling:
Spread softened butter over the dough. Mix brown sugar and cinnamon, then sprinkle evenly over the butter. -
Roll & Cut:
Gently roll the dough into a log. Slice into 8–10 rolls using a sharp knife or dental floss. -
Let Rise (Optional but Better):
Place rolls in a greased baking dish. Cover with a towel and let rise in a warm place for 30–45 minutes, until slightly puffy. -
Bake:
Preheat oven to 350°F (175°C). Bake for 20–25 minutes or until lightly golden. -
Make the Glaze:
Whisk together powdered sugar, vanilla, and milk until smooth. Drizzle over warm rolls. -
Tips

If your flour blend doesn’t include xanthan gum, add 1 tsp.
