Ingredients:

For the cookies:

  • 1 cup (225g) unsalted butter, softened

  • 2/3 cup (130g) granulated sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 2 ¼ cups (280g) all-purpose flour

  • ½ tsp salt

Filling:

  • ½ cup fruit jam (raspberry, strawberry, or apricot work best)

For the glaze:

  • 1 cup (120g) powdered sugar

  • 2–3 tsp milk

  • ½ tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Cream the butter and sugar together in a large bowl until light and fluffy.

  3. Add egg and vanilla, and beat until well combined.

  4. Mix in flour and salt until a soft dough forms.

  5. Scoop dough into 1-inch balls and place on the baking sheet about 2 inches apart.

  6. Make an indent in the center of each ball with your thumb or the back of a spoon.

  7. Fill the center with about ½ teaspoon of jam.

  8. Bake for 12–14 minutes, or until the edges are lightly golden. Let cool completely.

To Glaze:

  1. In a small bowl, whisk powdered sugar, milk, and vanilla until smooth.

  2. Drizzle glaze over the cooled cookies using a spoon or piping bag.

  3. Allow glaze to set before serving.

Tips:

  • Use seedless jam for a smooth center.

  • For extra shine, warm the jam slightly before adding to cookies.
