Made with a soft gluten-free dough and topped with creamy icing, they’re perfect for cozy mornings, holidays, or any time you need a sweet treat.

Ingredients

For the Dough:

  • 2 ¼ tsp active dry yeast (1 packet)

  • ¾ cup warm milk (about 110°F) – dairy or non-dairy

  • ¼ cup granulated sugar

  • 1 large egg, room temperature

  • 3 tbsp unsalted butter, melted (or dairy-free alternative)

  • 2 ½ cups gluten-free all-purpose flour (with xanthan gum)

  • ½ tsp salt

  • 1 tsp baking powder

For the Filling:

  • ¼ cup unsalted butter, softened

  • ⅓ cup brown sugar, packed

  • 1 tbsp ground cinnamon

For the Cream Cheese Icing:

  • 2 oz cream cheese, softened

  • 2 tbsp unsalted butter, softened

  • ½ cup powdered sugar

  • ½ tsp vanilla extract

  • 1–2 tbsp milk (as needed for consistency)

  • Instructions

    1. Activate the yeast:
In a small bowl, stir the yeast and 1 tsp of sugar into the warm milk. Let it sit for 5–10 minutes until foamy.

    2. Mix the dough:
In a large bowl, combine the egg, melted butter, sugar, and activated yeast mixture. Add flour, baking powder, and salt. Stir until a soft dough forms. It should be sticky but workable.

    3. Roll out the dough:
Place the dough between two sheets of parchment paper. Roll into a rectangle about ¼ inch thick.

    4. Add the filling:
Spread softened butter over the dough. Mix brown sugar and cinnamon in a small bowl and sprinkle evenly over the butter.

    5. Roll and cut:
Using the parchment to help, roll the dough tightly from the long side. Slice into 1 ½ inch rolls using a sharp knife or unflavored dental floss.

    6. Let rise:
Place the rolls in a greased 8 or 9-inch baking dish. Cover with a towel and let rise in a warm place for about 30–45 minutes.

    7. Bake:
Preheat oven to 350°F (175°C). Bake rolls for 22–26 minutes or until lightly golden.

    8. Make the icing:
Beat cream cheese and butter together until smooth. Mix in powdered sugar and vanilla, adding milk as needed for a pourable consistency.

    9. Ice and serve:
Spread icing over warm rolls and enjoy immediately!
