Ingredients

For the crust:

  • 2 ½ cups all-purpose flour (or gluten-free 1:1 baking flour)

  • 1 tsp salt

  • 1 tbsp sugar

  • 1 cup (226g) cold unsalted butter, cubed

  • 6–8 tbsp ice water

For the filling:

  • 6–7 medium apples (Granny Smith + Honeycrisp combo works great), peeled and sliced

  • ⅔ cup granulated sugar

  • ¼ cup brown sugar

  • 2 tbsp all-purpose flour (or GF flour)

  • 1 ½ tsp cinnamon

  • ¼ tsp nutmeg

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

For topping:

  • 1 egg (for egg wash)

  • Coarse sugar (optional)


🔧 Instructions

1. Make the Crust:

  1. In a large bowl, whisk flour, salt, and sugar.

  2. Cut in the cold butter using a pastry cutter or fork until crumbly.

  3. Add ice water, 1 tbsp at a time, mixing just until dough comes together.

  4. Divide dough in half, form into two rectangles, wrap, and chill 1 hour.

2. Prepare the Filling:

  1. In a large bowl, toss apple slices with lemon juice, sugars, flour, cinnamon, nutmeg, and vanilla.

  2. Let sit 10 minutes while you roll out the dough.

3. Assemble:

  1. Preheat oven to 375°F (190°C).

  2. Roll out one rectangle of dough on a floured surface to fit a 10×15-inch jelly roll pan.

  3. Transfer dough to the pan, pressing it into the edges.

  4. Spread apple filling evenly on the crust.

  5. Roll out the second dough piece and place over the top. Crimp edges to seal.

  6. Cut slits in the top to allow steam to escape.

  7. Brush with egg wash and sprinkle with coarse sugar (if using).

4. Bake:

  • Bake for 40–45 minutes or until crust is golden brown and filling is bubbling.

5. Cool and Serve:

  • Let cool at least 30 minutes. Slice into bars and serve as-is or with vanilla ice cream.
