Ingredients
For the crust:

2 ½ cups all-purpose flour (or gluten-free 1:1 baking flour)

1 tbsp sugar

1 cup (226g) cold unsalted butter, cubed

6–8 tbsp ice water
For the filling:

6–7 medium apples (Granny Smith + Honeycrisp combo works great), peeled and sliced

⅔ cup granulated sugar

¼ cup brown sugar
-
2 tbsp all-purpose flour (or GF flour)

1 ½ tsp cinnamon

¼ tsp nutmeg
-
1 tbsp lemon juice
-
1 tsp vanilla extract
For topping:

1 egg (for egg wash)

Coarse sugar (optional)
🔧 Instructions
1. Make the Crust:

In a large bowl, whisk flour, salt, and sugar.

Cut in the cold butter using a pastry cutter or fork until crumbly.

Add ice water, 1 tbsp at a time, mixing just until dough comes together.

Divide dough in half, form into two rectangles, wrap, and chill 1 hour.
2. Prepare the Filling:

In a large bowl, toss apple slices with lemon juice, sugars, flour, cinnamon, nutmeg, and vanilla.

Let sit 10 minutes while you roll out the dough.
3. Assemble:

Preheat oven to 375°F (190°C).

Roll out one rectangle of dough on a floured surface to fit a 10×15-inch jelly roll pan.

Transfer dough to the pan, pressing it into the edges.

Spread apple filling evenly on the crust.
