Fluffy Orange Sponge Cake

Here’s a soft, zesty Orange Sponge Cake recipe — light, fluffy, and bursting with citrus flavor. Perfect with tea or as a dessert!

🍊 Fluffy Orange Sponge Cake

Ingredients:

  • 1 cup (120g) all-purpose flour (or GF flour blend for gluten-free)

  • 1 tsp baking powder

  • 4 large eggs (room temperature)

  • ¾ cup (150g) granulated sugar

  • Zest of 2 oranges

  • ½ cup (120ml) fresh orange juice

  • ⅓ cup (80ml) neutral oil (like sunflower or vegetable)

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions:

  1. Preheat oven to 175°C (350°F). Grease and line an 8-inch round or square pan.

  2. Sift flour, baking powder, and salt in a bowl. Set aside.

  3. In a large bowl, beat eggs and sugar on high speed for 6–8 minutes until pale, thick, and tripled in volume.

  4. Add orange zest, juice, oil, and vanilla. Mix on low just until combined.

  5. Gently fold in dry ingredients with a spatula in two batches—don’t overmix!

  6. Pour batter into the prepared pan and bake for 30–35 minutes, or until a toothpick comes out clean.

  7. Let cool in the pan for 10 minutes, then remove and cool completely on a wire rack.

Mix ½ cup powdered sugar with 1–2 tbsp orange juice. Drizzle over the cooled cake.
