  • Instructions:

    1. Make the crust:

    • Preheat oven to 350°F (175°C).

    • Mix crushed graham crackers/Oreo crumbs with melted butter (and sugar if using grahams).

    • Press into a 9-inch pie dish.

    • Bake for 8–10 minutes. Let cool completely.

    2. Prepare the chocolate filling:

    • In a saucepan, whisk together cocoa powder, sugar, cornstarch, and salt.

    • Slowly whisk in milk until smooth.

    • Cook over medium heat, whisking constantly until mixture begins to thicken (about 5–7 minutes).

    • In a small bowl, lightly beat the egg yolks. Temper them by slowly adding a bit of the hot chocolate mixture, then pour yolks back into the saucepan.

    • Cook 2–3 more minutes, stirring constantly.

    3. Assemble the pie:

    • Pour the warm filling into the cooled crust.

    • Smooth the top, cover with plastic wrap directly on the surface, and chill for at least 4 hours or until set.
