Here’s a simple and flavorful recipe for Macaroni Noodles with Tomatoes, a classic comfort dish that’s both easy to make and deeply satisfying. Perfect as a main meal or a side!

Macaroni Noodles with Tomatoes

Ingredients:

  • 2 cups elbow macaroni (or any short pasta)

  • 2 tablespoons olive oil or butter

  • 1 small onion, finely chopped

  • 2–3 garlic cloves, minced

  • 2 cups fresh tomatoes, chopped (or 1 can diced tomatoes, undrained)

  • Salt and black pepper, to taste

  • 1/2 teaspoon sugar (optional – helps balance acidity)

  • 1/4 teaspoon red chili flakes (optional – for heat)

  • Fresh basil or parsley, chopped (for garnish)

  • Grated parmesan or shredded cheese (optional)

Instructions:

  1. Cook the Macaroni:

    • Bring a pot of salted water to a boil.

    • Add macaroni and cook according to package instructions until al dente.

    • Drain and set aside.

  2. Prepare the Tomato Sauce:

    • In a large skillet, heat olive oil or butter over medium heat.

    • Sauté onions until soft and translucent, about 3–4 minutes.

    • Add garlic and cook for another 30 seconds until fragrant.

    • Stir in the chopped tomatoes (or canned tomatoes). Cook for 10–15 minutes, stirring occasionally, until tomatoes break down and a thick sauce forms.

    • Season with salt, pepper, sugar, and chili flakes if using.

  3. Combine & Finish:

    • Add the cooked macaroni to the tomato sauce. Stir to combine and let it heat through for 2–3 minutes.

    • Adjust seasoning if needed.

  4. Serve:

    • Spoon into bowls and garnish with fresh basil or parsley.

    • Top with grated parmesan or shredded cheese if desired.

Optional Add-ins:

  • Cooked ground beef or sausage

  • Sautéed vegetables like bell peppers or spinach

  • A splash of cream or a pat of butter for richness
