Here’s a Gluten-Free Chocolate Chip Cookie recipe that’s soft, chewy, and totally satisfying — you’d never guess they’re gluten-free!


🍪 Gluten-Free Chocolate Chip Cookies

Ingredients:

  • 1/2 cup (113g) unsalted butter, softened

  • 1/2 cup (100g) brown sugar, packed

  • 1/4 cup (50g) white sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 1/4 cups (150g) gluten-free all-purpose flour blend (with xanthan gum)

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 to 1 cup (130–170g) gluten-free chocolate chips


Instructions:

  1. Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.

  2. In a large bowl, cream butter and sugars together until light and fluffy.

  3. Beat in egg and vanilla until smooth.

  4. In a separate bowl, whisk together gluten-free flour, baking soda, and salt.

  5. Gradually mix dry ingredients into the wet ingredients until just combined.

  6. Fold in chocolate chips.

  7. Scoop dough (about 1.5 tbsp per cookie) onto baking sheet, spacing them 2 inches apart.

  8. Bake for 10–12 minutes, or until the edges are golden but centers are still soft.

  9. Let cool on the pan for 5 minutes, then transfer to a wire rack.


✅ Tips:

  • Use a flour blend that contains xanthan gum or add 1/4 tsp yourself if your mix doesn’t include it.

  • For extra flavor, chill the dough for 30 minutes before baking.

  • Can sub butter with coconut oil for a dairy-free version!
