Here’s a super easy and fudgy Brownie Mix Cookies recipe — perfect when you’re craving cookies fast and only have a box of brownie mix on hand!
🍫 Brownie Mix Cookies
Ingredients:
-
1 box (18.3 oz) brownie mix (like Betty Crocker or Ghirardelli)
-
2 large eggs
-
1/3 cup vegetable oil (or melted butter for a richer flavor)
-
1 tsp vanilla extract (optional)
-
1/2 cup chocolate chips or chunks (optional but highly recommended!)
Instructions:
-
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
-
Mix brownie mix, eggs, oil, and vanilla in a bowl until a thick dough forms. Stir in chocolate chips if using.
-
Scoop the dough (about 1.5 tbsp per cookie) onto the prepared baking sheet. Leave some space between each.
-
Bake for 9–11 minutes — the edges should be set, but the centers still soft.
-
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Tips:
-
For crackly tops, don’t overbake!
-
Add nuts or a sprinkle of sea salt on top for extra flavor.
-
They firm up as they cool, so don’t worry if they seem soft out of the oven.
