Brownie Mix Cookies

Here’s a super easy and fudgy Brownie Mix Cookies recipe — perfect when you’re craving cookies fast and only have a box of brownie mix on hand!

🍫 Brownie Mix Cookies

Ingredients:

  • 1 box (18.3 oz) brownie mix (like Betty Crocker or Ghirardelli)

  • 2 large eggs

  • 1/3 cup vegetable oil (or melted butter for a richer flavor)

  • 1 tsp vanilla extract (optional)

  • 1/2 cup chocolate chips or chunks (optional but highly recommended!)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Mix brownie mix, eggs, oil, and vanilla in a bowl until a thick dough forms. Stir in chocolate chips if using.

  3. Scoop the dough (about 1.5 tbsp per cookie) onto the prepared baking sheet. Leave some space between each.

  4. Bake for 9–11 minutes — the edges should be set, but the centers still soft.

  5. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Tips:

  • For crackly tops, don’t overbake!

  • Add nuts or a sprinkle of sea salt on top for extra flavor.

  • They firm up as they cool, so don’t worry if they seem soft out of the oven.
