🌴 Gluten-Free Coconut Cake

Ingredients:

Dry:

  • 1 ½ cups gluten-free all-purpose flour (with xanthan gum)

  • 1 tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

Wet:

  • ½ cup unsalted butter, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 tsp pure vanilla extract

  • ½ tsp coconut extract (optional but adds great flavor)

  • ¾ cup canned coconut milk (shake well)

  • ½ cup shredded unsweetened coconut

Instructions:

  1. Preheat oven to 175°C (350°F). Grease and line an 8-inch round cake pan.

  2. In a bowl, whisk together the dry ingredients.

  3. In a separate bowl, beat butter and sugar until light and fluffy.

  4. Add eggs one at a time, then mix in vanilla and coconut extract.

  5. Add dry ingredients alternately with coconut milk, mixing just until combined.

  6. Fold in shredded coconut.

  7. Pour into pan and smooth the top.

  8. Bake 30–35 minutes or until a toothpick comes out clean.

  9. Cool completely before frosting.
