🍓 Gluten-Free Strawberry Ice Cream

Ingredients:

  • 2 cups fresh strawberries, hulled and sliced

  • ⅔ cup granulated sugar (divided)

  • 2 tsp lemon juice

  • 1½ cups heavy cream

  • 1 cup whole milk

  • 1 tsp pure vanilla extract

  • Pinch of salt

Instructions:

  1. Prep the Strawberries
In a bowl, mix strawberries with ⅓ cup sugar and lemon juice. Let sit for 15–20 minutes until juicy.
Mash slightly or blend for a smoother texture, then set aside.

  2. Make the Ice Cream Base
In another bowl, whisk together the remaining sugar, cream, milk, vanilla, and salt until sugar is dissolved.

  3. Combine & Chill
Stir in the macerated strawberries (with their juices) into the cream mixture.
Cover and chill in the refrigerator for at least 2–3 hours or overnight.

  4. Churn
Pour into your ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes), until thick and creamy.

  5. Freeze
Transfer to an airtight container and freeze for 2–4 hours for a firmer texture.

Tips:

  • Use ripe, in-season strawberries for the best flavor.

  • Add chopped strawberries after churning for extra texture.

  • Always double-check labels on ingredients like vanilla and cream to ensure they’re gluten-free.
