LEMON BROWNIES

Here’s a zesty and soft Lemon Brownies recipe — also known as “lemonies”! These are rich, fudgy like brownies but bursting with lemon flavor instead of chocolate.

🍋 Lemon Brownies Recipe (Gluten-Free Option Included)

Ingredients:

For the brownies:

  • 1 cup (200g) granulated sugar

  • 1/2 cup (113g) unsalted butter, melted

  • 2 large eggs

  • 2 tbsp lemon zest (from 2 lemons)

  • 2 tbsp fresh lemon juice

  • 1/2 tsp vanilla extract

  • 1 cup (125g) all-purpose flour (or gluten-free 1:1 flour blend)

  • 1/4 tsp salt

For the lemon glaze:

  • 1 cup (120g) powdered sugar

  • 2–3 tbsp lemon juice (fresh)

  • Optional: extra zest for topping

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch (20×20 cm) baking pan with parchment paper.

  2. Mix wet ingredients: In a large bowl, whisk together melted butter and sugar until smooth. Add eggs, lemon zest, lemon juice, and vanilla extract. Whisk until fully combined.

  3. Add dry ingredients: Stir in flour and salt until no lumps remain.

  4. Bake: Pour batter into the pan and smooth the top. Bake for 22–25 minutes, or until edges are lightly golden and a toothpick comes out mostly clean. Don’t overbake—these are meant to be fudgy!

  5. Cool completely before glazing.

Make the glaze:

  • Whisk powdered sugar with lemon juice until smooth and pourable.

  • Spread glaze over cooled brownies.

  • Let set for 15–20 minutes before slicing.
